Stir the softened cream cheese, finely shredded sharp cheddar cheese, finely chopped pimento-stuffed olives, olive brine, garlic powder, and black pepper until smooth and well combined.
Lay out the flour tortillas flat on a clean surface. Spread 2-3 tablespoons of the cream cheese mixture over each tortilla, covering the entire surface evenly.
Arrange 3-4 slices of turkey along the center of the tortilla, ensuring minimal overlap to create an even layer. Leave about ΒΌ inch of the tortilla edges exposed to help seal the roll. Add a single layer of spinach leaves over the turkey.
Starting from the edge closest to you, roll the tortilla tightly, tucking in the fillings as you go to ensure a secure roll.
With the seam side facing down, slice the roll into 1-inch wide pinwheels using a sharp knife.
Arrange the pinwheels on a platter, cut side up, or place them into an airtight container for meal prep. If desired, insert a decorative toothpick into each pinwheel to help hold them together.
