Ingredients
  

  • 2.2 cups frozen pineapple chunks fresh or frozen works, just ensure they’re fully frozen for a frosty texture
  • 2.2 cups ice cubes adds a refreshing chill to the drink
  • 6.6 oz. ¾ cup Coco Lopez® Cream of Coconut (a thick, sweet coconut syrup ideal for cocktails)
  • 2.2 oz. ¼ cup full-fat unsweetened coconut milk (or substitute heavy cream for extra richness)
  • 6.6 oz. ¾ cup white rum (provides the perfect amount of boozy flavor)
  • Juice of 1 lime about 2 tablespoons (adds a tangy contrast to the sweetness)
  • Pineapple slices and Maraschino cherries for garnish and extra tropical flair

Equipment

  • 1 Blender Used to blend the ingredients until smooth. Any blender works here, but ensure it can handle ice. If needed, let the frozen pineapple sit for five minutes to soften slightly.
  • 1 Measuring cups Useful for getting the proportions right, especially when making it for the first time.

Method
 

  1. Place the frozen pineapple, ice, cream of coconut, coconut milk (or heavy cream), rum, and lime juice into a blender.
