  • 2 cups Sharp cheddar cheese - Shredded freshly grated preferred
  • 4 oz Cream cheese - Softened to room temperature
  • cup Mayonnaise - Can adjust for creamier texture
  • 4 oz Diced pimentos - Drained plus 1 tablespoon liquid optional
  • ¼ teaspoon Garlic powder - Optional
  • ¼ teaspoon Onion powder - Optional
  • ¼ teaspoon Cayenne pepper - Adjust for spice
  • ½ teaspoon Worcestershire sauce - Adds umami
  • To taste Salt - Optional adjust as needed
  • To taste Black pepper - Optional

Equipment

  • 1 Box grater or food processor (For shredding cheese)
  • 1 Large mixing bowl (To combine ingredients)
  • 1 Sturdy spoon or spatula (For mixing)
  • 1 Airtight container (For storing pimento cheese)
  • 1 Can opener (For pimentos)

Method
 

  1. Shred cheddar cheese using a box grater or food processor. Let it come to room temperature for 15–20 minutes.

  2. In a large bowl, stir together softened cream cheese and mayonnaise until smooth and lump-free.

  3. Fold shredded cheddar and diced pimentos into the cream cheese mixture. Add garlic powder, onion powder, cayenne pepper, Worcestershire sauce, and pimento liquid if desired. Stir until evenly mixed.
  4. Cover and refrigerate at least 2 hours or overnight for best flavor and spreadability.

  5. Bring to room temperature 30 minutes before serving. Use as a sandwich spread, dip for crackers or vegetables, or burger topping.
