Ingredients
  

  • 3.3 cups fresh peaches about 6-7 peaches, peeled and sliced
  • 2.2 tablespoons fresh lemon zest about 2 lemons
  • 1.1 teaspoons vanilla extract for added flavor
  • 1.1 cups granulated sugar adjust to taste
  • 6.6 cups cold water divided into portions for the mixture and dilution
  • 1.1 cups fresh lemon juice about 5-6 lemons
  • Ice optional, for serving
For garnishing:
  • lemon slices for a refreshing garnish
  • fresh peach slices to complement the drink

Method
 

  1. Combine the peaches, lemon zest, vanilla extract, sugar, and 2 cups of cold water in a medium saucepan. Keep the heat moderate to avoid boiling.

  2. Cook the mixture for 15-25 minutes, stirring occasionally, until the peaches are soft and easily mashed.

  3. Mash the peaches using a masher or wooden spoon until well broken down.
  4. Remove the saucepan from the heat and place it in the refrigerator to cool completely.
  5. Once the mixture is cooled, strain out the solids using a fine mesh strainer, or save some pulp for extra peach flavor.

  6. Add the fresh lemon juice, remaining cold water, and ice to the peach mixture.
