Method
 

  1. Whisk the soy sauce, dark soy sauce, water, brown sugar, and cornstarch together in a bowl until smooth, then set aside.

  2. Cook the rice noodles according to the package directions, drain well, and reserve until needed.
  3. Heat the oil in a large wok or skillet over medium-high heat, then add the ground beef and break it apart while cooking until nearly all pink is gone.
  4. Stir in the minced ginger and garlic, cooking until fragrant and lightly softened, about 2 to 3 minutes.
  5. Pour the prepared sauce into the pan and let it gently bubble, stirring, until thickened and glossy.
