Ingredients
  

  • 1 English muffin Split in half for sandwich base
  • 1 large egg For cooking in ramekin
  • 1 slice Canadian bacon Use cooked or pre-sliced
  • 1 slice American cheese or substitute with cheddar for different flavor

  • 1 Small Pan Just big enough to cook one slice of Canadian bacon.
  • 1 Ramekin The secret to getting that perfect round egg shape. A small microwave-safe bowl works too.
  • 1 Microwave Makes cooking the egg incredibly fast and easy.
  • 1 Fork For whisking the egg before microwaving.

Method
 

  1. Toast the English muffin halves until golden and crisp.

  2. Heat a small pan over high heat. Add the Canadian bacon to the pan and cook for about 45 seconds on each side until lightly browned.

  3. Spray a ramekin with cooking spray and crack the egg into it. Season with a pinch of salt and pepper. Whisk the egg with a fork, then microwave for 40-50 seconds, checking at 40 seconds for doneness. If needed, add another 5 seconds.

  4. Place the slice of cheese on the hot egg immediately after cooking to melt.
  5. Assemble the sandwich by placing the cooked Canadian bacon on the bottom half of the toasted muffin. Place the top muffin half over the ramekin, then flip the ramekin to release the cooked egg on top of the bacon. Finish by placing the egg on the sandwich and enjoy!
