Ingredients
  

  • 6 8- oz Boneless skinless chicken breasts Choose fresh or thawed chicken breasts for best results
  • 2 ¼ teaspoon Sea salt For seasoning chicken
  • ½ teaspoon Black pepper Adjust to taste
  • 1 tablespoon Olive oil For sautéing chicken
  • 1 ¼ cup Cremini mushrooms sliced; mild, earthy flavor
  • ½ cup Cooked bacon chopped; optional, adds extra richness
  • 2 cloves Garlic peeled and crushed; aromatic flavor
  • 3 sprigs Fresh thyme Fresh herbs enhance the sauce
  • 1 ¼ teaspoon Cajun seasoning optional, for a slight spicy kick
  • 1 ¼ cup Heavy cream For a rich and creamy sauce
  • 1 ¼ tablespoon Grated parmesan cheese plus extra for garnish, creamy and nutty

Method
 

  1. Pat the chicken dry using paper towels. Season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 4-8 minutes on each side, until golden and cooked through. Transfer to a plate and cover to keep warm.

  3. Add the mushrooms, bacon (if using), garlic, thyme, and Cajun seasoning (if using) to the same skillet. Cook for about 5 minutes, stirring occasionally, until mushrooms are golden brown.

  4. Stir in the heavy cream and bring to a simmer. Scrape the bottom of the pan to release any flavorful bits.
  5. Add the grated parmesan cheese, stirring until the sauce becomes smooth and creamy.

  6. Return the cooked chicken to the skillet, spooning the sauce over the top. Let it cook for another 1-2 minutes, allowing the chicken to warm through.
  7. If desired, sprinkle with more parmesan cheese and fresh parsley before serving.
