Ingredients
  

  • 2 ½ cups mashed ripe banana about 5 large bananas
  • ½ cup cane sugar or brown sugar
  • ½ cup melted butter or vegetable oil, for greasing the pan
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract pure
  • 1 ⅓ cups all-purpose flour spooned and leveled
  • 1 ¼ teaspoons baking soda helps with rising
  • ½ teaspoon sea salt enhances flavor
  • ¾ teaspoon cinnamon for warmth
  • teaspoon nutmeg adds depth of flavor
  • ¾ cup chopped walnuts plus 2 tablespoons for topping

Equipment

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the mashed bananas, sugar, melted butter, eggs, and vanilla.

  6. Bake for 50 to 60 minutes, or until a toothpick inserted comes out clean and the top springs back to the touch. If the top browns too quickly, cover it with foil after 40 minutes.
